Luxury Warwickshire hotel launches new sustainable menu as part of major ‘green’ shakeup for 2024

A historic manor-house hotel in the heart of Warwickshire has launched a new sustainable winter menu – the first of an array of green initiatives set to be unveiled for 2024.

Billesley Manor Hotel and Spa, a luxury hotel near Stratford-Upon-Avon, has designed the menu to reflect sustainability in all its dishes, while utilising the finest seasonal British ingredients that resonate with the flavours of the region.

This new approach not only ensures the freshness and quality of each dish but also supports local farmers and producers, creating an authentic and sustainable dining experience that pays tribute to the offerings of the Warwickshire countryside and beyond.

Over 40% of the hotel’s main meals are now vegetarian or vegan, demonstrating its commitment to healthier, greener dining options, with the new menu’s Butternut Squash & Rosemary Terrine being just one of many vegetarian and vegan options.

Alongside the new menu, the hotel is planning on increasing its sustainable offerings as it prepares for a greener 2024. The launch of a comprehensive supplier screening process, for instance, ensures that its partners uphold the highest standards of sustainability.

By expanding its menu options, Billesley Manor is aiming to cater to the growing demand for plant-based dining, as well as significantly reducing its environmental footprint. These plant-based creations not only minimise the carbon footprint associated with animal agriculture but also promote ethical and responsible sourcing of ingredients.

Richard continued: “Equally important in our culinary journey is the celebration of British meat offerings. Billesley Manor's menu showcases the finest cuts of meat, like the "Slow Cooked Pork Belly" and the "Fillet of Beef," prepared with utmost care and precision. Each meat dish reflects our commitment to sourcing high-quality food, supporting our British farmers and promoting the time-honoured traditions of British agriculture. The hotel has also created a kitchen garden, growing its own fruits, vegetables, and herbs. In the garden, coffee grinds find new life as soil nutrients.
